It is no easy matter to give a historical site a new lease of life and turn it to face the future, without sacrificing its past. Between Castelnaudary and Toulouse, Nathalie and Gerald Garcia maintain this fragile balance in their superb 11th century Cathar castle. The six bedrooms and the suite are all carefully decorated in a contemporary style, with warm yellow tones that glow like early morning sunshine in the South of France. Gerald’s cusine is inventive, especially where the delicious desserts are concerned. But at night, from your window, it is easy to imagine the shadow of a medieval knight crossing the little stone bridge.
